Instructions

  1. Grab the heavy bottomed pan and add in the sugar, water and corn syrup.
  2. Mix until combined.
  3. Bring the mixture up to a boil.
  4. Keep stirring frequently for an even boil process.
  5. When the mixture comes to a boil, put in the sugar thermometer.
  6. For a hard crack lollipop, the mixture needs to be 300 to 310 F. The candy thermometer has hard crack on it to measure right.
  7. This takes around 10-12 minutes.
  8. In the meantime, prepare the silicone molds with a lollipop stick.
  9. Add lavender petals or fresh lilacs or even dandelions.
  10. When the thermometer is up to hard crack, turn down the heat completely.
  11. Pour in the essential oil and rose/orange blossom water.
  12. Stir until combined.
  13. Quickly ladle in each lollipop mold with the hot sugar mixture.
  14. Tap the molds a few times to remove air bubbles.
  15. Let the lollipops set for at least 30 minutes at room temperature.
  16. Remove the lollipops from molds when hard and present as a bouquet or wrap in baking paper or plastic for a adorable gift.
