Instructions

  1. Get a large mixing bowl and add the dry ingredients first.
  2. Make a well in the center and pour in water and olive oil.
  3. Mix in with your hands until everything comes together in a dough.
  4. Now take away the mixing bowl and turn out the dough onto a larger flat surface.
  5. Knead the pasta dough until the dough becomes soft and pliable.
  6. Tip your finger in the dough, if it springs back, that means the dough is kneaded enough.
  7. Make a disc and round shape of the dough and slightly flatten.
  8. Knead until combined and wrap up in cling film and refrigerate for at least an hour.
  9. Get the pasta machine in order and add a little pasta flour in the pasta machine on top and on your surface.
  10. Tip: This step is easier to do with 2 people. Set your pasta machine on the biggest setting.
  11. Roll out the dough a little more flat with a rolling pin to help the pasta machine along. Rectangle/oval shape.
  12. Put the dough through the pasta machine twice and lay flat on the surface.
  13. Carefully place the flowers on the dough and press lightly.
  14. Fold over the dough in half and proceed to put the dough through the pasta machine.
  15. Roll out to desired thickness and from here you can make ravioli, tagliatelle, spaghetti and some much more.
  16. Always cook fresh pasta in sea salted boiling water for 2-3 minutes.

Blessed Lughnasadhki!
