Peanut butter and jelly. A magical combo that started to get me when I was a little snuggle muggle. I love the fruityness of the jam against the richness of the peanut butter it is just MERLIN's BEARD so delish! Let me show you how I made it.

 

You will need:

 

- two slices of sourdough toast
- 50 grams of frozen berries
- half a plum (make sure it is a ripe and juicy one)
- 1 tbsp maple syrup
- zest of half a lemon
- pinch of cinnamon
- juice of half a lemon
- pinch of salt
- 1 tbsp of chia seeds
- peanut butter for spreading
- ginger jam for spreading

Garnish: mixed seeds like sunflower and pumpkin seeds and shredded coconut.

 

First toast of your bread nice and toasty. On both sides of course. Meanwhile... make the jam. It takes hardly no time at all. Put everything for the jam in the pan: berries, maple syrup, salt, lemon and a pinch of cinnamon. Warm up on a low heat. Stir occasionally for two minutes until the berries pop and reveal their beautiful purple juices. Then add the chia seeds and your jam is done. Slice some plum slices very thin and it is time to construct.

 

Toast - ginger jam - peanutbutter - jam - plums - coco and last but not least the seeds.

 

Drink with a lovely cup of tea and you are good to go!
