The smell of freshly baked muffins in the morning makes me feel like home and so comfy. I don't do a lot of baking in the morning but after making these muffins I want to make them everyday now! They are so delicious, moist, filling and super easy for on the go or in your packed lunch. And you only need one bowl, fork and a spatula. Let me show you how to make it.

 

For 12 muffins:

 

- 4 very ripe bananas
- 2 cups of flour
- 3 tbsp chia seeds
- 1/2 cup vegan butter (melted)
- 1 tsp baking soda and powder
- pinch of salt
- 1 tbsp vanilla extract
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1/2 cup of shredded coconut
- 5 big strawberries (chopped)
- 1 cup of organic sugar (coconut sugar is also nice)
- zest of 1 lime


 

Take a big bowl. First mash up the bananas with a fork. Melt the vegan butter on low heat in a small pan. Meanwhile add the dry ingredients to the bowl and mix. not to much only until slightly undermixed. Then add the wet ingredients en mix until combined. Preheat the oven to 180. Grease your muffin tin or if you have papers also great for these muffins. Bake them for 25-30 minutes  until golden brown and fluffy. Let them cool a little bit before eating but they are best freshly out of the oven but that is just my opinion hihi.
