This is by far my favorite breakfast at the moment. Not only because Professor Trelawney is involved. Honestly her charachter inspires me the most for Magical Food Department. I always imagine her sitting in her beautiful purple Divination Room eating all the purple food she could find. Also I had a lot of dishes after this recipe, including some special tea cups. Not the GRIMMMMM don't be afraid haha! Let me show you how to make it.

 

for 2 muggles:

 

- 1 and a half cup of coconut/almond milk
- 1,5 tbsp chia seeds
- 2 tbsp soy cream
- 1 tsp vanilla extract 
- pinch of salt
- 1 tsp cinnamon and 13 spice powder
- pinch of ground cardamom
- 4 slices of white sourdough
- 2 tbsp agave syrup

 

Mix all the ingredients in a large bowl. And set it a side for a few minutes so the chia seeds can plump up and and it is a substitute for egg so it needs some time to bind the batter.

 

After the batter is a little bit thicker after ten minutes. soak the bread individual in the batter And fry the french toast 4 minutes of each side with a little bit of sugar.


for the blueberry compote:

 

- 100 grams of fresh blueberries (they are in season now in the Netherlands so good)
- 1 tsp of freshly grated ginger
- 1 tsp vanilla extract 
- 1 tsp of five spice 
- juice of half a grapefruit 
- 2 tbsp agave syrup

 

Put all the ingredients in a small sized pan and let that bubble away for 10-12 minutes. Until every berry is popped and released their beautiful purple juices. 

 

Garnish:

 

- 2 tbsp blueberry soy yoghurt 
- some more homemade compote
- dark chocolate pieces
- agave syrup
- mint leaves
