HONEYDUKES COCONUT ICE 🥥

Welcome to Honeydukes

For a sweet Thursday treat. A vegan version of coconut ice! Made with condensed coconut milk, vanilla and shredded coconut. I loveeeee everything about Honeydukes. Back in my baking days I had a shed in the garden that my dad build an bakery in and it had a mint green wall and a retro black and white block floor. It was an amazing space. Not only am I in love with the aestetics of Honeydukes but every sweet or candy is magical and not just a regular piece of candy. The packaging is the best part. It makes the whole eating experience amazing. So I tuned in with my sweeth tooth again and created these coconut ice cubes. IT is VERY easy to make. Just combining everything in one bowl and let that set in the fridge and that is it. And the fun part is sharing it with your magical friends. 


This recipe is:

Equipment:

Baking paper, brownie tin (28×12) and a spatula.


Ingredients:

🍭 2 cups of icing sugar

🍭 3,5 cups of shredded coconut

🍭 1 tsp vanilla extract or paste

🍭 few drops of beetroot juice (natural food colouring or use pink gel colouring 

🍭 pinch of salt

🍭 320 grams of condensed coconut milk 

🍭 1/4 tsp of cream of tartar 

🍭 pink vegan sprinkles (garnish)

Magical method

  1. Line your brownie tin with baking paper, make sure you have the sides covered. Set aside.
  2. Take a large mixing bowl and put your dry ingredients in first. 
  3. Open your can of condensed coconut milk (room temp) and add that magic to the mix.
  4. Mix until fully combined. Then split the mix in two. 
  5. Colour one half of white coconut ice mix. The other half needs to stay white. 
  6. I only used half of the baking tin because I wanted to have thick blocks of coconut ice later. Spread out the white and pink layer on top of each other. Use the back of the spatula to make it really even.
  7. Sprinkle on the sprinkles on top and let the coconut ice sit in the fridge overnight.
  8. Cut in squares and serve to all your magical friends!

Is cream of tartar vegan?

Look for the one without Lactose in it. Then it is a vegan friendly product.
