DUDLEY'S KNICKERBOCKER GLORY 🍨 Happy Friday my fellow Witches and Wizards! During the festive season The Philosopher's Stone is my favorite book to reread. A little phrase from the book: "They ate in the zoo restaurant and when Dudley has his tantrum because his knickerbocker glory didn't have enough ice cream on the top, Uncle Vernon bought him another one and Harry was allowed to finish the first." • J.K Rowling.

So I thought it was finally time to create a vegan masterpiece of the most British sundae out there. This is such a fun and great dessert to have at your Witchmas dinner with your magical friends! I will explain from top to bottom: raspberry coulis, mango, pistachio nuts, cherry glace, my homemade raspberry ripple ice cream, coconut whipped cream and a marashino cherry on top.

Oh and because it is the festive season a lime leaf on the side for the scent. It is really nice while you eat you get a hit of lime and freshness coming your way. And of course a peppermint candy cane on the side.

 

This recipe is so easy little snuggle muggle Dudley could do it himself if he was not such a little prick. Because you do not even need a ice cream machine. My secret ingredient? Condensed coconut milk.

Literal heaven let me tell you! It makes the ice cream scrumptious and indulgent. 


For 1 hungry Dudley:

Vegan No Churn Ice Cream:

🍨 1 can of condensed coconut milk

🍨 800 ml whipped coconut cream

🍨 1 tsp vanilla extract 

🍨 7 fresh raspberries 

🍨 4 tbsp coconut yoghurt 

Garnish:

Garnish your ice cream with some shredded coconut, a handful of pistachio nuts and freeze-dried raspberries.

Magical Method:

  1. Whip your coconut cream until airy and fluffy. Add your yoghurt and condensed milk and whip for another minute. 
  2. Mash the raspberries with a fork and ripple through the mixture.
  3. Put the ice cream mixture into a freezer safe container and add the garnish on top.
  4. Freeze for at least four hours or overnight. 

Sundae ingredients starting from bottom to top:

🍨 5 raspberries, mashed 

🍨 4 pieces of rijpe mango 

🍨 handful of pistachio nuts

🍨 4 glace cherries 

🍨 3 scoops of the homemade ice cream 

🍨 5 tbsp whipped coconut cream 

🍨 marashino cherries and raspberries on the top

🍨 peppermint candy cane
