KARKAROV STROGANOFF! 🔥 when I was a little snuggle muggle I went to all the HP movies in the cinema (it became tradition of course😏) and I remember all the feels I got when the students of Durmstrang made their entrance through the Great Hall. I cried and felt so empowered at the same time. ✨ Of course Hogwarts is and stays my all time favorite Wizarding School but my second choice would be Durmstrang, I just absolutely love the vibes. 🙌🏼 So I dedicated my magical version of a mushroom stroganoff to Igor Karkarov. So I imagined I was his wife today. Her name is Vladimira 🤣 and she wanted to make a comforting and heartwarming meal for her precious Igor for him when he comes home. I served the Stroganoff with WILD rice, gherkin, olive and parsley salad, wilted spinach with nutmeg and a big rustic walnut bread to soak up all of that gorgeous sauce.
For 2 hungry wizards:
- 200 grams oyster mushrooms
- 250 grams chestnut mushrooms
- 400 grams white mushrooms
- 2 tsp smoked paprika (sweet) and 1 tsp normal paprika powder
- 7 sprigs of fresh thyme
- 2 tsp masala tandoori spice
- 0,5 tsp all spice
- 2 tsp dijon mustard
- 1 tbsp vegan butter
- 1 spring onion
- 6 cloves of garlic
- 1/2 organic veggie stock cube
- 200 ml water
- 250 ml oat cream
- juice of 1 lemon
How to make:
First slice up all of your mushrooms. Heat up a shot of olive oil in a big sauce pan a long with 1 tbsp of vegan butter. Let that foam up and heat up. Add the mushrooms to the pan a long with salt and pepper. Let them get sticky and golden brown in 10 minutes of frying. Add all of the spices to the mushroom mix and let the aromatics come out and cook off for 2 minutes. This is a really important step. Don't rush it this is where the magic happens and flavours will get more bold and deep. After a few minutes when your house smells amazing add your fresh thyme, garlc and spring onion. Mix until combined and let the flavours mingle. Then add your mustard and the stockcube and also stir in. Then add your water and oat cream and let that bubble away for 10 minutes with the lid off. Finish off with salt and pepper and juice of a lemon to activate freshness.
I served the stroganoff with wild rice and wilted garlic spinach but mashed potatoes or only bread is also amazing. The stroganoff is the star of the show so just choose what you ever you like. And I had a gherkin-parsley and olive salad. Super yummy! This is a great recipe for a witchy mid-week meal! Enjoy the magic!
