PULLED DRAGON SANDWICH

PULLED DRAGON SANDWICH 🐉🔥 • this sandwich has been in my mind for a long time! I have always been obsessed with magical creatures like dragons. The first time that Fire hot  Big Black Egg that Hagrid won in the Pub the other day opened and there he was Norbert😊 the cutest dragon who I had ever seen! So this sandwich is so dedicated to all of my dragons and firestarters. I used the incredible buns from @nofairytales with paprika-chili flavour. The vegan pulled pork is made of young green jackfruit. And a dragon slaw with pomegranates jewels and all the red veggies I could find. Slathered with vegan mayo. A beef tomato and there you have it! Great for lunch and diner, super easy to make and super magical in my opinion! Let me show you how to make it.

FOR 3 SANDWICHES:

 

VEGAN PULLED DRAGON:

 

It's important you buy the young and green jackfruit in brine for this recipe. The ones in syrup is not going to work.

 

- 280 grams of jackfruit
- 1 tsp cayenne pepper
- 3 cloves of garlic
- 1 tsp oregano
- 1 tsp ground fennel seeds
- 1 tsp ground cumin
- 2 tsp all spice
- 1 tsp smoked paprika
- 1/2 cup vegan whisky bbq sauce
- salt and pepper to taste

 

Open your can of jackfruit. Drain and rinse of the pieces. Pull the jackfruit and remove any seeds of other hard and rubbery bits. You only want the shredded flesh. Take a big bowl and add all the jackfruit including with the crushed up garlic and spices. Marinate for at least 30 minutes in the fridge.

 

Preheat your oven to 180. Mix in the bbq sauce to combine with the spiced jackfruit. Add the vegan pulled pork to a tray and bake off for 25 minutes. Until juicy and crispy on the edges. Meanwhile you can make your dragon slaw.

 

BIG bowl of dragon slaw:

 

- 350 grams of finely sliced red cabbage
- 1 red bell pepper
- 8 radishes
- half a Pink Lady apple
- 80 grams of kimchi (with asian pear)
- 1 cooked beetroot + 2 tbsp beetroot juice
- juice of 1 orange
- 1 tsp dried oregano
- salt and pepper to taste
- 1 tbsp maple syrup
- half a pomegranate (+ juice)

Slice up the cabbage in fine slythers. Do the same with the bell pepper. You have to cut this very fine otherwise the salad becomes too chunky and you cannot taste every ingredient in one mouth full and that is what we want to achieve in eating sandwiches like this. Dice up the apple in very small cubes. Also with the cooked beetroot along side with the juices. Slice thin circles of off the radishes and add the kimchi and all the other ingredients. Taste better if you made this a half an hour before serving! 

 

Assemble:

 

Take your favorite buns and slather them with vegan mayo. Add the dragon slaw, pulled dragon, a slice of beef tomato and another spoonful of slaw and last but not least some more vegan mayo.
