CARROT CAKE for breakfast? I would love that idea and in the weekends maybe I eat a piece for breakfast but this overnight oat recipe is perfect to start of your day. You can even take it on the go if you wanted to. Or make a magical morning out of it with some Harry Potter theme songs and eat this magical bowl of goodness. The oats are spiced with gingerbread spices and a touch of vanilla. Topped with stewed apples, fresh fruits and nuts. Let me show you how to make it.
Yield: For 1 muggle
- 1 ripe banana
- 1 tbsp agave syrup
- 1 tsp vanilla
- 1,5 tsp gingerbread spices
- 2 small carrots
- 1/2 cup of rolled oats
- 1 cup of almond milk
- zest of 1 lime
- pinch of salt & cinnamon
- optional: if you want to have a thicker oat consistency add 1 tsp of chia seeds or flax seeds
I advice to make this a night a head so you only have to add the garnish in the morning. Or just eat it without the garnish. Mash up your banana with the agave and vanilla. Add the zest of the lime and pour in the almond milk in your bowl. Stir to combine. Then add your spices and rolled oats. Again stir around. And last but not least the rolled oats. Cover your bowl and put in the fridge overnight. ENJOY THE MAGIC!

- Walnuts + Pistachio
- Coconut (shredded)
- Dates stuffed with peanutbutter
- Plain soy yoghurt with a touch of vanilla
- Raw carrot (grated)
- Raspberries and Grapes
- Granola
