I am so excited to share this recipe! Vegan baking is a lot of fun so I created a Divination theme through out the recipe and dedicated it to one of my favorite Professors at Hogwarts: Trelawney. GIVE ME THE CUP DEAR! So I layed out all of my books. Got my tea from the shelves and made these beautiful Divination Rolls to go with it. Let me show you how to make it!

 

Yield: 14 big divination rolls

 

Dough:

 

- 2 cups of almond milk (at room temperature)
- 1 packet of dry yeast (7 grams)
- pinch of salt
- 2 tbsp organic vegan sugar
- 1/2 cup of melted vegan butter
- 5 and a 1/2 cup of flour

 

Filling:

 

- 3/4 cup of vegan butter
- 2 tbsp cinnamon powder
- 200 grams of frozen blackbe
rries

- 150 grams brown sugar (also organic)
- 1 tbsp agave syrup
- 1 tsp five spice powder
- pinch of cardamom powder
- 1 tsp chia seeds

 

Icing:

 

- 1/2 powdered sugar
- 2 tbsp blackberry juice
- 1 tsp of vanilla extract
- 1/2 tbsp almond milk

 

Garnish: fresh blackberries

 

Method:

 

First melt your vegan butter and set a side. Then warm up your almond milk slightly and add to a big bowl. Together with the melted butter, sugar and yeast. Let that bloom for a minute before you add the dry ingredients.  Add only 5 cups and set the other half a side for later.  Add the salt when your are stirring to combned the dough. 

 

Cover your bowl and let the magic do it's work for an hour. Meanwhile you can make the filling.

 

Add to a small sauce pan blackberries, agave and the spices. Stir and let that bubble away for 5 minutes. If the blackberries start to release their purple juices then add the chia seeds to make the jam or filling thicker.  Add to a small bowl and wait until cooled. 

 

After 1 hour the dough is proved and ready for the 1/2 cup of flour you left behind.  Kneed a dough on a flat service by hand to get those gluten to work. Then roll the dough out in a rectangle. The dough should be 1 cm in thickness. 

 

First spread on your vegan butter. Followed by te cinnamon and the brown sugar. Spread evenly. And then spread on your blackberry jam. Then you are going to roll up the dough into a big sausage. I could get 14 buns out of this recipe. Depends how big you are cutting them. 

 

Preheat the oven on 180 Degrees and grease your baking tray with vegan butter. Circle around your buns in the tray and cover again with a tea towel for 30 minutes to prove again.

 

After 30 minutes bring them to the oven to bake for around 25-30 minutes. While baking make your blackberry icing. So simple: Grab a bowl add the snow together with the vanilla extract and blackberry juice. If the icing needs to be more loose add some almond milk. Pour the glaze over the buns while they are piping hot from the oven!  Decorate with fresh blackberries and you have such a great treat! Enjoyed best warm with a cup of tea.
