Goodday my fellow Witches and wizards! Welcome to the Hogwarts Library. Making scones on a sunday morning is magical. The smell of freshly baked goods should be bottled as a scent. It is a amortentia smell to me. But back to the Library. This is of course inspired by the first Harry Potter movie. Easy vegan scones with sour cherries and white chocolate an absolute treat! Let's get baking!

Yield: 8 scones


Ingredients:

🍓 210 grams of flour

🍓 3 tsp baking powder

🍓 1 tsp baking soda

🍓 1,5 tbsp cold vegan butter

🍓 100 ml cold coconut milk (from a can)

🍓 100 grams of dried sour cherries 

🍓 50 grams of coconut sugar 

🍓 1/2 cup chopped white vegan chocolate 

🍓 1 tsp apple cider vinegar 

🍓 1 tbsp agave syrup 

🍓 pinch of salt 

🍓 1 tsp vanilla extract 

Garnish:

Your favorite jam and thick coconut yoghurt (instead of clotted cream)

Magical method


Before you start get everything ready. Preheat your oven to 180 degree. Line your baking sheet with baking paper. 

Weigh all your ingredients so you can make the scones at one go. Take a large mixing bowl and put all the dry ingredients in. Make a well in the center. Add the vegan cubed butter and crumble between your fingers until it looks like and feel as wet sand. Take your coconut milk, add the vinegar, vanilla extract and agave syrup. Let that sit for 5 minutes to get a sort of vegan buttermilk. Pour the milk into the well. Add the chopped dry cherries and white chocolate and mix until the dough comes together.

If the dough is too dry, add some coconut milk and if too wet some flour. When dough comes together stop kneeding. Pat out the dough in a circle and slice the scones into a triangle shaped pieces.  Brush them with coconut milk and sprinkle with some coconut sugar. Bake them for 13 to 15 minutes or until golden brown. Serve with vegan butter, jam, coconut yoghurt and a delish cup of tea! 

I topped my scones with candied cherries for that extra magical touch but they are just delicious on their own..
